Chutneys and a cake

Thank BQ for these as She made me do something I have been putting off! As to history these are my mothers and credited to her mother !

Apple Chutney
2 lbs of bramleys
1/2 lb of onions
4 ozs sultanas
2 tsps of salt
2 ozs chopped stem ginger
1 tsp cayenne pepper
1/2 wine vinegar
1 lb of sugar

peel core and slice apples,peel and chop onions. place in a large pan with all except the sugar .Bring to the boil then simmer until fruit is soft ,then add the sugar . cook until thick then bottle as normal !

Red tomato chutney

1 lb ripe tomatoes
1 lb cooking apples
1 lb onions
1 lb brown sugar
1 pt malt vinegar
1 level Tbs of mustard powder
1 level tsp of cayenne
1 level tsp of mixed spice

skin tomatoes then chop along with apples and onions ! add all ingredients to pan then proceed as normal

Beetroot chutney

2 lbs beetroot
1/2 lb onion
1 large cooking apple
12 ozs gran sugar
1 level tsp salt
1/2 pnt spiced malt vinegar

prepare all as normal then put through a mincer then as normal .


Boiled fruitcake

1 cup water
1/4 lb marg
1 cup currants
1 cup raisins
1 cup sultanas
1 cup sugar
3 tps mixed spice
2 cups self raising flour
1 tps bicarb
1 egg

using breakfast cup for measuring put the water marge sugar and fruit in a saucepan  simmer 20 minutes and put aside to cool ! when cold add the flour bicarb and beaten egg mix thoroughly and add to prepared tin !

I have varied this a little I use a mug not a cup add a mug of glace cherries and find 1 hr 1/2 works well in my fan oven at 150 c .

Think i'll try the beetroot as I've just been given loads, Could you cook  and chop them before adding to the other ingredients

Thanks for the fruit cake recipe! My mum used to make this from a memorised recipe but she died suddenly 10 years ago and I never really knew what it was called to look up a recipe. I've copied it down and shall be doing this!

While I'm here she also made a walnut loaf (just walnut no coffee) for our neighbour who didn't like raisins and I used to love it, but I've not been able to replicate it, any ideas? I'm sure she used the same sort of method as the fruitcake? Could that work for nuts?

Ah ok, thanks anyway! She wasn't much of a cooker/baker but these two loaves remind me of her, managed one recipe in 10 years hopefully it won't take 10 years for the next!

You wanted a spicy chutney you may find that a little sweet I am tempted to add a couple of chillies  :)

I have a very similar apple chutney receipe which I love with the sutlanas replaced with dates.
