I've just prepared some cider vinegar with spices, and it's gone cloudy.  This hasn't happened before, but I used a different recipe that suggested putting the spices in with the vinegar, bringing it to the boil and then leaving it to cool.  I then strained it through muslin, but it's looking rather murky ... I presume there's nothing I can do now, but does the cloudiness matter? (other than not looking so good!)

The cloudyness won't affect the flavour but as you say it could look better.  I'd put it to one side and leave it to mature and the fine sediment to settle to the bottom - for about 6 months if not more !   ::)  Cheers,    Tony.

So long as it tastes ok i'd put it in a dark bottle.

No one will know the difference  ;)

It's possible that this vinegar is of a ldifferent pH than the last brand you bought, and has reacted a bit differently with the ingredients you added. It should still taste fine.

Cider vinegars, depending on the brand, can vary between 2.8 to 3.5, some higher still. So not all cider vinegars are created equal.
