Verdict - YUMMY! I think I need some fresher cinnamon or ground cinnamon (I'd only got a stick which was goodness knows how old and crushed a bit so it didn't taste that much). :D :D :D

Have you ever tried freezing it? Not certain that it would work. Just that I've a lot of cooking apples that I've got to do something with and, with a broken leg, it has to be something that I can mix after John has passed things to me!!!!!!!!!! Otherwise I'll just peel and chop them and get John to puree them.

I have not long returned from a holiday in Dorset, where Apple Cake can be found everywhere.  This is a recipe I have found to be very nice.

INGREDIENTS
•   225g cooking apples, peeled , cored and chopped
•   juice of 1/2 lemon
•   225g plain flour
•   1 1/2tsp baking powder
•   115g butter diced
•   165g soft light brown sugar
•   1 egg beaten
•   2-3tbsp milk
•   1/2tsp ground cinnamon

DIRECTIONS
1.   preheat the oven to 180c. grease and line a 7inch round cake tin.
2.   toss the apple with the lemon juice and set aside. sift the flour and baking powder together then rub in the butter, until the mix resembles breadcrumbs.
3.   stir 115g of the sugar, the apple and the egg, mix well, adding a little of the milk at a time to make a soft doughy mix.
4.   transfer into your tin.
5.   in a bowl, mix the remaining sugar and cinnamon, sprinkle over the cake mix.
6.   bake for 45-50mins. leave to cool in the tin for 10mins, then transfer to a wire cooling rack.

Made said cake yesterday evening with windfalls from the lawn.  Taking it with us to see the grandchildren today - verdict later!  (but I must say it looks very good and rose beyond my expectations (as a novice cake maker))

Well, as it was jummy I would have eaten it all by tomorrow, so I have frozen some, to make it less readily available :blush: So will let you know how it defrosts :)

I had frozen my cake in individual slices.
In the interests of reporting back to the forum only, you understand :D I took a slice out and put it in the toaster!

I am happy to report that it is scrummy toasted :) I didn't put spread on....I thought that would be over egging the pudding. Would be a quick pud tho with instant custard.....good job I haven't got any in the cupboard :lol:

Very tasty thank you  - have no idea how long it will last or if it will freeze as it is going far too fast!!
Will make another tomorrow for daughter and hubby.
