Do any of you clever people have a tried and tested dairy free cake / sponge or muffin recipe? I have a dairy intolerant colleague and we are having morning coffee tomorrow in the office and that means lots of cakes but I would like to make something that she could enjoy at the time and not suffer for later. Thanks in anticipation.

My MIL is coeliac and FIL diabetic. When we visit I google what I want ie gluten free diabetic chocolate cake, and it's surprising what you can find. There are a lot of recipes using oil instead of butter, especially muffins, and usually reviews. Saves a fortune on cookery books.

I've just has a look at the site that Joy recommended and am going to try a lemon courgette cake because I have a big courgette from the garden that needs to be used before it is joined by some more. Thanks again.

This recipe (http://www.dailymail.co.uk/femail/food/article-1388777/Costa-del-icious-Traditional-Spanish-almond-cake.html) from the Daily Mail is for a traditional Spanish almond cake (Santiago Cake) and is brill - flour free and fat free being made of only eggs, sugar and ground almonds with a pinch of cinnamon and ditto salt. Gorgeous and dead easy.
For a similar thing done rather more in the style of a bakewell tart, the genuine Spanish recipe is this one (http://www.spain-recipes.com/tarta-santiago.html) which like the Mail take on it uses the same short list of ingredients with the addition of a bit of lemon rind (and icing sugar to dust on top simply as part of the presentation of it)
Certainly our favourite fat free, flour free and milk-free treats. Unfortunately neither of them has any staying power - as soon as they are cool enough to cut both disappear like snow in summer!

Swiss roll contains no fat so is suitable for anyone that cannot eat dairy products.
I make cakes with Pure sunflower margarine which is dairy free.

I made a courgette and lemon cake from the website that Joyful mentioned and it was the hit of the morning coffee. I have to print out at least 5 copies of the recipe and will definately do it again myself. It was really easy to do and lovely and moist to eat.
