Gavin, I've got 2 cucamelon pickles I have tried that are good, but they are short-lived preserves, rather than full-blown pickles.  Will put the recipes in the cooking bit  :)

I have also added a recipe - one that I use for ordinary cukes but it should work with cucamelons. Again it is not a 'keeping' recipe but very tasty.  :D

They were on my list of different things to grow this year but decided not to cause others said that they weren't really worth the effort or space. I'll be watching this thread with interest so please post updates and let us know what you thought about cucamelons.
