Banana and Green Tomato or Apple Chutney

Banana and Green Tomato or Apple Chutney

This is good because you can use surplus Toms or Apples.

400 gm geen toms or apples roughly chopped
200gm onions chopped
200gms raisins
100gms preserved ginger chopped
2 bananas, peeled and sliced
300gms brown sugar
25gms salt
1 x 5ml spoon cayenne pepper
65ml vinegar

Cook tomatoes, onion and raisins, ginger and bananas in a pan with lid, slowly until tender.  If apples are used instead of toms, peel, chop and add 250ml water to prevent burning whilst cooking with the rest of the fruit and vegetables.
Add spices, sugar and vinegar and simmer slowly in the open pan until it goes thick.  
Pot, seal and label.     Makes approx 1.1/2kgs (3lbs)

no need to add extra water to toms and they are not as sugary as apples so they will not burn to the pan.  Enjoy  -   Mrs Bouquet

Mrs Bouquet, I made the banana and green tom chutney, I couldn´t buy preserved ginger so I used loads of fresh ginger grated (I have some in the freezer)  It turned out really well :D

just made a batch of chutters (my first attempt) Put too many chillies in it  :shock:  :oops:  :oops:

Thanks for this.  It's a bit out of the ordinary which is great as I'm making chutneys and jams for a friend's Macmillan Coffee Morning in Sept so need some eye catching unusual products to draw the punters.

One question - do you use cooking or eating apples?

I have always used cookers because I have a tree full.  I think you could easily use eaters, but it will probably be a little more sweet, so I would slightly reduce the amount of sugar you use but not too much or you won't get the set.  I have got loads of other unusual chutnies. I'd love somemore of your unusual recipes please.  I have a great book - "Best Kept Secrets of the WI - Jams, Pickles and Chutneys" - which has a number of good ones in it but nothing that's really out of the ordinary.
