My husband remembers his grandmother storing home made passata in jars, but as she died many years ago we can't ask her for her recipie and instructions. I don't want to fill my freezer up. Thanks.

Maria, I made loads last summer with my tomatoes- my Spanish neighbour showed me how to make it: :D

Wash and chop tomatoes and put them in a large bowel/bucket.

When all toms are chopped up get a clean teatowel and put some of the toms in the middle and ´wring´ out the t.towel getting as much juice out of the toms  as you can.

Then pack down into jars, pushing in as much as you possible can (I used the grinder bit from my pestle and morter thingy)  then put the screw top lid on tight and put the jars in a single layer into a saucepan.

Cover with cold water.  Bring to the boil and boil for 4 minutes.  Turn off the heat and leave the tomatoes in the water until the water is cold.

I kept my bottled toms in the fridge as it is very hot here in the summer.  They were delicious- hubby who is not a passata lover really enjoyed my passata :D  I even stupidly gave some away :(  Had I realised how good they were I´d have kept them!!
Looking forward to bottling more this summer :D

So do you 'wring out' all the toms in that way Pamela?  Never done it like that before, but will try this year!!!
