I have noticed that the eggs produced by my hybrids have deteriorated significantly in quality over the winter with thin shells and watery contents. All my birds are fed on layers pellets, pigeon conditioning grain and greens and have open access to oyster shell.
These birds are going into their (and my) third season. Can anything be done or should I just introduce a few replacements?

It's just the age of the birds Des.

As they get older the whites become runnier, nothing wrong with them !

In fact it makes them fit the bread better for a fried egg sarnie  :lol:

The modern hybrid really is a performance machine and one of the few draw backs about keeping them is that they literally do suffer from burn out. They are designed to produce heavily over a relatively short period of time.
If you can ease a few POLs into your flock you will certainly be able to guarentee continuity of egg supply.

That's the problem you get with ex battery chooks because of all the hard work they had to do whilst in the cages!
