elderberry jelly wont set..

I made 5 jars of elderberry jelly but am having hard time getting it to set; I used juice of one lemon and half a jar of certo.

So my question is shall I re-heat the jelly but add juice of 4 lemons?

Last of all the jelly that was left over in the pan did set??

you could try warming it a bit and adding some more certo.

If the left-over set, it probly means you didn't boil enough (needs reducing).

Added some lemon juice and gave it a harder boil I'm sure that was my mistake needed more reducing, added the rest of the certo so now wait and see if it sets, thanks for the replies.

Have you tasted it yet? is it just elderberries or a mix? I made some a few years back and I thought the flavour was "interesting". :lol:

I added some blackberries, I'm not really keen on the taste but my daughter likes it and two of my boys seem to like it.

As for it setting still no luck  >:(

3 pints of elderberry juice, 3 pound suger, 1 lemon, half bottle certo (125g)

The first time I used elderberry's, 1 lemon and half a bottle of certo, I did not add any water.

The second time "re-boil" I added 4 lemons and about a pound of blackberries and the other half of the certo, again I did not add water.

Since my post saying the jelly did not set I have since checked and the jelly has set but very soft.

Seems strange.  Maybe the fruit was too ripe (less pectin).
I've noticed that fruit must be well drained after washing, otherwise that introduces quite a bit of water.
As long as its not actually runny, best to call it a day. (no better if it sets like rubber  >:( )

Thats a very kind way of putting it Poolfield :lol: I think elderberries taste like iron filings.
The blackberries should help no end :lol:
