i have put one bag of manure on my potato bed and forked it in, it covered the bed about 1 to 1.5 inches. is this enough or should i add more?

also, is manure good for all vegetable growing, or can it be detrimental? i will be growing carrots, parsnips, pumpkins, onions, beans, peas, etc etc, is there anything i SHOULDNT add manure to?

It depends on the size of the bag and the size of your potato bed. :D
I don't add manure to any root crops on my plot, some people on our allotments add it to their potato bed, but I don't. When I did i seemed to suffer a lot more with slug damage and scab.
Manure can cause forking to your parsnips and carrots, so I definately wouldn't give them any, all the other crops on your list should be fine.
When I plant my pumpkins and squashes, i dig out a 2 foot square hole by about a spades depth, half fill it with manure, then mix in the soil that I dug out. I had some cracking pumpkins this year. :D

Being contrary to clampit(!) - my spuds are the prime thing I add manure to - the more the better - as they are very heavy feeders. I use very well rotted horse manure & I've not had problems with scab. I get slug problems regardless, I think a lot of folk do, but I go for the more slug resistant varieties of spud.

But do avoid carrots & parsnips etc..
Did it really tell you to do THAT on the packet?

Sadgit - growmore is fine. Most of the farm grown potatoes get no manure.

Potatoes like plenty of potash and you might think about using a potato fertiliser that has the potash as sulphate of potash as this gives better quality potatoes.

Most of the fields around us are owned by McCains chips and Walkers. They fertilise their fields every year.
  Having said that they dont do any rotation, so the soil might need it????????
I may take my time.....but i'll get there in the end.

The farmer near me produces potatoes for Walker's crisps. He manures and rotates his crop as well! I guess each farmer is different.

I manure the rotated next seasons potato bed early (Oct/Nov) - the ground is roughly dug and I then just chuck on the manure over the top and leave for the worms to do the rest, I dont dig it in....
