I bought three Asparagas crowns (?) yesterday in Lidl. They all have white shoots. Are they still viable?

Also can i locate the bed for them to be grown in a slightly shady place or do they need full sun?

White shoots just mean they got no light for a while, but are still viable. They really do prefer full sun if you can find some; in a pinch they'll take slight shade for part of the day.

Should i pinch off the white shoots before i plant them or leave them?

You can pinch or leave, doesn't matter as the plant will sort itself out. Do rest the crown on a mound of sand for better drainage when planting and this will guarantee better results.
