Sounds great beginning to enjoy chutney more now I've discovered wine vinager and a slow cooker.

Can i have peoples opinion please? I am planning making this as i have more courgettes than i know what to do with! I have some roasted beetroot i made the other night, if i chopped it up and added it to the recipe, do you think it would work? Or completely ruin it!  :lol:

Either reduce the courgette quantity by the weight of the beetroot or increase the other ingredients to make a bigger batch  ;)

Oh my, i think i might have to double the quantities as my largest courgette weighs just under a kilo!  :ohmy: Not mine i hasten to add, one from a neighbouring plot who planted far to many and now has marrows galore! And so i blithely offered to take a couple to make chutney rather than see them go to waste, never mind that i have about 7 of my own waiting to be used!  :blink:

It sounds as if we are all being bullied by courgettes. :lol: :lol:

This is a recipe I have used for ages which is lovely with cheese.
And it uses a lot of courgettes.

3lb of prepared courgettes, ( cut in half longways and the seeds scooped out with a teaspoon, then chopped into 1 cm chunks)
2 teaspoons of whole allspice berries, finely crushed
2 teaspoons whole black pepper finely crushed, although still with a little texture
1lb skinned, seeded chopped tomatoes
8oz roughly chopped onions
1 to 2 tablespoons salt.  I put in 1 table spoon at the beginning and then taste at the end to see if i really need it.
2 teaspoons ground ginger

1 and 1/2 lb sugar
750ml wine, cider or white distilled vinegar.
Usual method. Sling it all into together simmer until sugar has dissolved.
bring to boil  and boil steadily for about 50 mins or until reduced by half and it is thick.  Stir constantly to prevent burning and sticking.
Pot and cover in the usual way.


It's simmering away in the slow cooker as we speak.

Hoping someone can help... BQ possibly, as she seems to be the chutney queen! We really enjoyed this last year, but are now all out... I have a pumpkin about to "turn" - do you think the same recipe would work with pumpkin instead?

Yes  ;) Depending on the particular pumpkin - the pieces may break up a bit more while cooking, that's all  :)
