Another Strawberry Jam question
« on: June 19, 2009, 20:24 »
Made some strawberry jam as per the mirowave recipe from the recipe page, but had real problems with it being very runny.  Had to microwave for another 15 minutes.

I used jam sugar for the first time would this have anything to do  with it not setting?

Jam sugar contains extra pectin, which aids setting for fruits with less natural pectin such as strawbs, so I doubt the sugar was to blame.

I know that strawb jam can often turn out runny but the science eludes me this morning, sorry  ???
I try to take one day at a time, but sometimes several days all attack me at once...

Mine is  just a tad too hard. Making some more today for a family gathering tomorrow.

400 g strawbs
400 g sugar
about a tablespoon of lemon juice.

Mash strawbs and add sugar and heat slowly to a rolling boil. When it sets on a cold plate, put into sterilised jars.

Took about 20mins start to finish this week. Fills one jam jar.

also had same too runny jam from the microwave , all ive done in the past was to give it a bit extra time cooking , and when ive done jam in the pan i tend to oer do it , last year with my cherry it was syropy with cherries so i blitzed it up put in a bit brandy to loosen it and its a lot more like jam now .
