Title: Apple Scone Round
Post by: mrs bouquet on August 28, 2008, 13:23
This is good for using up some windfalls, and you can make extra scone mix and put it in the fridge where it will keep for ages, then just add apples and milk.

1 medium cooking apple
8oz SR flour
1/2 tspn salt
1 level tspn baking powder
2oz butter
2oz castor sugar
scant 1/4pint milk

Peel, core and finely chop apple.  Sift flour, salt and baking powder. Rub in butter then add sugar.(this is what you put in 'fridge if making extra)
Now add chopped apple and milk, do not let it go sticky.
Roll out into a round about 8 inches.  I lightly mark with a serrated knife into triangular shaped wedges to make it easier to cut later.
Place on a greased baking sheet, brush top withmilk and sprinkle with demerara sugar.  Bake in oven 200c or gas 6 for about 20-25 minutes.

This is good warm with butter, or with blackberry/current jam, or does well with a chunk of cheddar cheese !  Mrs Bouquet
