we had a bumper crop of plums this year so the wife made quite a few jars of jam the rest we put in the freezer for pies and stewed plums etc

and although there nice to eat from freezing there as sour as Larry and need plenty of sugar when cooked  before they frozen they where  nice and sweet obviously freezing has made them sour is that a natural thing that happens to fruit when its frozen because it tends to be the same for our frozen strawberries and raspberries although the strawberries  didn't seem so sour when frozen individually?

are we doing anything wrong when freezing soft fruit such as plums etc?

We had a carrier bag full of plums given to us the day we left for a holiday. So we popped them in the freezer and, about 3 months later, turned them into jam. It was lovely and didn't seem sour at all.
