recipie for the mini bakewells is from the good food mag , i dont as a rule buy the mags unless im traveling .
it says
375g pk of short crust but i used my own .
1 table spoon p.flour.
4oz soft butter.
4oz caster sugar.
1 large egg
4oz ground almonds
150g blackberries , about 3 for each tart
1oz toasted almonds
oven at 200c/180c fan/gas 6.
make your pastry and rest 30 mins then stamp out with an 8-9cm cutter 12 rounds line a bun tin and pop back into the fridge while you make the filing .
place in a bowl the flour, sugar, egg, butter, ground almonds and i also added a little almond essence .
whisk the whole lot together
divide between the bun tins , push 2-3 blackberries (i did half with cherry jam and half blackberries )
sprinkle with toasted almonds and bake for 15-20 mins
bakewells one of hubbys favourites ,in hindsite i wil try my blackberries first as they were abit tart , and sprinkle with a touch of sugar , but its a personal taste thing
enjoy
