Title: cabbage and chestnuts
Post by: peapod on December 20, 2010, 23:23
Anyone got a good recipe?

We like quite plain, and everything I read has apples and spices in.  We just want an alternative to including garlic, fromage frais etc

you could pan fry some pancetta, then when crisp add some chopped chestnuts and then add the shredded cabbage. cook until the cabbage is wilted.

Nigella did brussels with pancetta and chestnuts, you could try it with cabbage instead.

recipe here (http://www.foodnetwork.com/recipes/nigella-lawson/brussels-sprouts-with-chestnuts-pancetta-and-parsley-recipe/index.html)

edited to fix link  ::)

that looks very similar to what I suggested but with added butter and alcohol  :lol: :lol: (personally I don't think you need the butter as the pancetta releases some fat - but the wine sounds a good idea  :D).
