Title: chilli paste

Just made this as an experiment...

12 chillies diced (including seeds)
5 cloves garlic diced
generous pinch salt n pepper
big glug extra virgin olive oil

bung it all in a small pan and fry for 10 mins, then blend with a hand blender til smooth. The oil separates from the paste, so spoon the paste into a clean jar and pour a little oil over it to make a seal and save the rest of the oil in a stoppered jar.

The oil is chillie flavoured and the paste is really hot - I added some to mash yesterday and it was lovely!

Think it should keep for a couple of weeks (if it lasts that long)  :)

that sounds lovely! And I was just trying to work out what to do with my habenaros that have just ripened :)  will have to try that :)

me too as my oh has grown so many i am looking for interesting ways of preserving them other than freezing and drying, will defo give this one a go, thanks for sharing
