Its disgusting, it has the weirdest taste on the planet. And it sunk right at the last minute.
I could forgive the sink if it tasted good but good grief people say this is the nicest cale ever
Pass me the bucket. No eggs in it but it tasted of rotten eggs :unsure: anyone actually ever tried this...... Lardman maybe hes always trying wacky

Not surprised it tasted foul.
I have tried a few allergy free cake recipes but none of them were up to much.

People rave about it, it appeared on my news feed for the allergy group so I thought I ought to give it a go. Never again.
I have a super recipe from Snowdrops but I am always on the look out for new ones.

Just had a look BQ & it's very like a fruit cake recipe I had that was really nice. I'll try & find it & post it for you, it always worked for me for DD. ;)

Sorry to hear that BQ, as I've followed your family allergy problems. I know this might sound trite, and it's not meant to be, but maybe mimics just aren't where it's at. I don't blame anyone for trying any sort of wonder food that might give some of the of the pleasure and none of the drawbacks, but normal cake has always been cake for certain reasons. It's a behavioural/emotional thing in the end if a long term way of life is to be established without regret. It's the emotions that need training. Almost like us folk who don't eat meat... little point in eating "chicken style" this or that burger, and often it tastes like nothing on earth in any case, apart from the salt delivery. But then up pops fried haloumi cheese that ticks all those taste/emotional boxes without any of the baggage. I wish you good luck in your continuing quest. The foods that will suit your family are out there somewhere.

I use lots of cardamom; it is used a lot in Scandinavian baking and I love the flavour.
It is also really good in coffee cake. I make a coffee, chocolate and cardamom biscotti to go with coffee.

I assume, maybe wrongly that you chose to be meat free at and at an age when you can accommodate that choice yourself. When you have a child with intolerances or allergies you try to make life normal for them.

All we are trying to find is a suitable alternative to what the rest of the family have, so when we eat chocolate cake the little ones can have chocolate cake.
Finding new foods for florence is highly important now she mixes with other children at pre- school as she is very aware that she is different, dont get me wrong for three she is amazing and will say its ok I know I cant have it but she should at least have a mum who is prepared to push the food boundaries and try her best, and that is my job from now until the day I die. Hell one day this girl may need an allergy free wedding cake, got to research early. ;)
She is what she is and I wouldnt change her for the world but the soya and milk issue on top of the egg is difficult as it leaves little to substitute in a recipe. ;)

My nephew has life threatening allergies to eggs, dairy, nuts, shellfish, certain E-numbers and so on. He's a grown man now and moved further away but I used to cook for him a lot. It was so hard to provide party food that his friends would enjoy and really difficult to put any weight on the boy!
If you let me know what to avoid I will see if I can dig out any of my old recipes.

If you could list the things she's allergic to I wouldn't mind looking through some of my vegan cookbooks to see if anything can be tweaked. Avoiding traditional ingredients can be overwhelming and seem more like a chemistry experiment !!!

Florence is allergic to eggs, milk, soya, peanuts and treenuts
Harry as of 9.30am today is now free from eggs, milk, soya, wheat and gluten.
Oh joy we have two weeks on and two weeks off for the next few months until we see a patten or change. Off to the health food shop for a look.

BQ, have you looked at the paleo diet and it's philosophy. It's gluten free, dairy free and avoids all processed modern foods . One can always cut out the peanuts, and obviously soya and all grains are well off the menu. It basically goes back to a diet before we farmed as a species. It has many ideas on cakes and deserts, some raw, some cooked. Just a thought.
A friend and I used to own a natural healing centre and health shop. Allergy and it's difficulties was one of the biggest reasons people came to us.

Coconut cookies
2 oz cocounut baking flour ( Tiana)
3 oz gluten and wheat free flour ( doves farm)
4oz dairy free margarine
2oz light brown demerara sugar.
Place all ingredients into a bowl and mix until it forms a ball. Roll into small balls and flatten slightly.
Bake for 12 mins at 160 ( fan)
Now I tried these today, they taste good, look fine but they are a bit too crumbly for little Harry. What can I do to alter this, any ideas.

As you say golden syrup would be good, could do all doves gluten free flour & add some coconut oil for flavour missing out the syrup.

Had to order doves bread flour because all our local supermarkets dont stock it ::) guess where I found it in stock.

Tesco stock doves normal but not the bread flour. Harry loves bread so the need for a loaf is big ;)

Here's a Chocolate Cake Recipe from The Joy of Vegan Baking.
Preheat oven to 180C or has mark 4.
Lightly oil bundt pan, 9 inch springform pan or muffin tins.
188g of All Purpose Flour
150g granulated sugar
1/2 teaspoon of salt
1 teaspoon of baking soda
30g unsweetened cocoa powder
1 1/2 teaspoons vanilla extract
80ml canola oil
15ml white distilled vinegar
235 ml cold water
Thoroughly combine dry ingredients in a bowl. Create a well in the center of dry ingredients and add vanilla, oil, vinegar and cold water. Mix until just combined. Pour into prepared pan and bake for 30 minutes. If making cupcakes check for doneness after 15 mins.
You could try swapping out the AP flour for say coconut flour, but since coconut flour is drier you'd need to compensate that with extra "egg" ingredients. (Which I think would be the water and oil.- or a combo of water oil and banana if you wanna cut down on the oil content) The vinegar and baking soda give it rise more than moisture.
This is just a working theory though. I'll keep looking in the meantime.

You're not far off shortbread ratio with that cookie recipe BQ. which is probably why they're a little short :) How are the little ones with sugars, syrups and treacle ? I'd be starting with a goodly dollop of soft dark brown sugar and keep going until they come out chewy.

It's a rotten thing to cope with- when my friends little boy comes I always do choccy krispy cakes- cocoa, soya marge & syrup. It's all I know- oh and pink wafers are milk free I think :D

I tried something similiar as Florence can have rice krispies but the dairy free marg stayed too soft so they wouldnt hold together when lifted up.
What recipe do you use.

Ok so today is the turn of the wheat, gluten, egg, soya and dairy free cakes, which makes me question how much you can remove from a cake recipe and still end up with a cake lol. The mix was like water so I am not hoping for much. The batter was super sweet uncooked too so that may need to be changed. Oh its an exciting life I have. ::)

The cakes from earlier looked ok but tasted like a bath sponge. In the bin they went.
I decided to make up my own recipe.
4 oz dairy free Margarine ( we use vitalite as its soya free too)
4 oz sugar
4 oz flour, gluten and wheat free
2 small mashed bananas
2 tsp golden syrup
1 tsp b powder
15ml water
Not bad overall, taste good, look good, just needs some tweaking or am i expecting too much expecting a cake like we eat

Hubby actually picked up a tub of normal marg, we all use the dairy free and found switching back unbearable normal marg is so salty

These are the banana cakes, not a huge rise but taste is ok, apart from sweet. Could I get away with half the sugar.

I think you'd get more of a rise if you had an acid in there to activate the baking soda. (Vinegar or even lemon juice should do the trick). Do you have a recipe for frosting?

For florence we just use a normal icing sugar combo. Is icing sugar gluten free I havent checked yet, didnt bother icing as they were too sweet. Will try lemon. Thanks :D

Or even orange juice if you'd rather.
If you use oil rather than marg and give the liquid a good whisk to get a colloidal sol you should also add to the rise.
Your bath sponges probably just needed flavouring, simple sponges rely on the egg and butter to give taste. If the texture was right keep at it and just taste - there's nothing in the recipe with any flavour ::)
I wouldn't have binned them I'd have poked holes in them, made some lemon syrup and turned them into lemon drizzle cakes :tongue2:

I don't :wub: just lob it all in. I would use a couple of tblsp blobs of soya marge, a dollop of syrup and a couple of desert spoons of coca, melt together chuck in krispies. chuck into cake cases, Bung in fridge. If you can't wait give the kids a spoon 8) I've been know to add sprinkles..

Going to ice them, no sprinkles as they all contain gluten.

No chocolate allowed.
The ready roll we had last week had a nut warning but I may check some other brands.
Really pleased with these. May try them with jam in the middle too, like a jammy dodger. ;)

Why no chocolate, dark is dairy free. You used to be able to get chocolate buttons & smarties type ones. Sainsburys have some similar.

I was in Lidl today & checked theirs out, they had 3 lots, the normal ones with the icing sugar etc. then there was 2 other ones, some Christmas ones looked to be ok I think for F & H. Let me know if yours hasn't got them & I'll pop back & get you some

Can they have carob as a chocolate alternative? Smashed carob sprinkles?
Fruit leather cut into long strips and spiralled on top of cakes looks lovely too...
The cake recipe with the vinegar is very like my old chocolate cake recipe I'm afraid...and our lad didn't need gluten free so perhaps that is why ours tasted okay.
Have you tried them with oat flapjacks? (or is there gluten in oats as well?)

Batch two banana muffins, taken out golden syrup, add a few chopped raisins and I mean a few as thats all I have and those greek currants have a may contain gluten warning.
Much happier they look and taste fab. :D

Basic but tasty, my only issue is allergy free cakes refuse to hold onto the wrappers, which annoys me.
I want to find some of those cardboard mini loaf tins. I used to see them everywhere but now I want some I cant find them lol just typical

You could also pulverize banana chips, or dehydrated strawberry, and add that to your icing sugar mix...yum

If you have trouble finding food coloring that is gluten, nut, soy and dairy free you can always use natural dyes from things like beet root, blueberries, Concord grapes, carrots etc.
I think someone mentioned using fruit leather as sprinkles and I think that's a nice idea. You could even use small cookie cutters to cut out tiny shapes :)
Oh and if you're in to making your own jams/preserves those would do wonderfully as a "filling" for muffins or cupcakes.
I'm making myself hungry now lol.

Here's a youtube channel you might find interesting. The presenter, Clara, was in her nineties when the episodes were filmed. She recreates recipes that she and her family used during the Great Depression. She often recounts stories from her childhood at that time. Pretty sweet old lady.

BQ fruit leather is really easy to make. Just purée the fruit, add sugar to taste and pour in a thin layer onto a baking sheet lined with parchment paper (or a silpat). Leave it in the oven at the lowest setting possible (mine is around 175 or 200 F) and leave the door slightly ajar so the air can circulate. It will take several hours but it's a low maintenance job :). Alternatively, if you have a food dehydrator you can just stick the purée in there.
