add mint for etc etc etc

As well as mint jelly, you can make rosemary jelly, or any herb really.  Also any fruit which you want to make into a jelly will benefit from a proportion of crabapples.

Be careful where you pick em from - the ones right next to a busy road tend to be tainted to the core with heavy hydrocarbons and other delightful by-products of the infernal combustion engine!
The Dales - probably fingerprint marks where God's hand touched the world

How do you know when they're ready to pick? Our tree is bend double with them, but they're still very hard - or are they always hard??!

All little apples are either crab apples or feral trees grown from discarded apple cores and all are edible.  Some will be very hard and sour and some good enough to eat raw.

Best way to tell if they are ripe is to cut one open and see if the seeds are ripe.  They should be dark brown and look ready to sow.  You can then taste a little piece of the apple and see how sweet/sour it is  :)

Do heed Hamstergbert's advice though and steer clear of roadside trees.  Always amazes me when I see people picking roadside blackberries - no ta!
