I have never been sure how to make this scrummy dish. I have a bag of frozen cooked chicken breast, can I just thaw this, or should I start with fresh raw chicken. Also can I use salad cream instead of mayo, and I would prefer to use mango chutney instead of jam.
Please can you tell me how to do this, but not the complicated version :D Thanks, Mrs Bouquet

Although Mrs Growster is the expert here, she just uses cooked chicken, shredded coarsely, thawed of course or out of the fridge from the day before, dried apricots (soaked), sultanas, a little onion and mayonnaise - Hellmans or similar. The curry addition is usually a medium heat.
I've just asked her what else goes in, and it appears that it's just that lot, stirred maybe with a little double cream, and no more cooking required!
And now we're planning exactly the same, so many thanks for the reminder ;0)

Probably the best way, the sauce 'covers' the dark bits then!

So the coronation chicken 'sauce' is mainly mayo eh !?
I hate mayo, but love c/chicken sandwiches. Heh ho !

Always made mine from leftover chicken.
Goes nice on top of a few Baked potatoes or spread on top of a nice homemade loaf slice.
In a bowl, add about five tablespoons of mayonnaise, a few teaspoons of curry powder, a tablespoon of tomato ketchup (I use one of my homemade frozen and defrosted tomato paste cubes) and then any kind of sweetener, just a tablespoon, like a homemade chutney, but often use lemon curd.
Shred the chicken into small inch pieces, add to the bowl and mix.
Never put currants/sultanas in it, not sure I'd like that.

I did a 'hurry' version the other night and added a dessert spoonful of chilli jam!
Apart from not being able to speak for several minutes, I'd actually reccomend it - if you dare...!
