Title: curried Parsnip Soup

1 oz butter
1 1/2 Lb Parsnip coarsely chopped
1 large onion, chopped
crushed Garlic clove
3tspn Curry powder
3 pnts Chicken (Vegy) stock
salt,n pepper to taste
7 fl oz single cream
Chives to garnish

Melt butter in large saucepan, add the chopped Parsnip, Onion and crushed Garlic. Stirring occasionally for 5 or so minutes/until the onion is softened but not coloured.
Stir in the curry powder and cook for 1 minute, then blend in the stock. Add salt 'n pepper to taste. Bring to the boil, stirring then simmer gently for 20 minutes or until the parsnips are soft and tender.
Puree the soup in a food processor or use a blender until smooth.
You can return to the heat and add the single cream. Serve garnished with fresh chives.

I love spicy parsnip soup. Even  parsnip haters love it  :D  

I use coriander powder (2 tspn) and cumin powder (1 teaspoon) instead of curry powder, and a little chilli powder.

Just the thing for a bonfire party I'd say  :D

I put my recipe for curried parsnip soup on here ages, ago, but it disappeared.

I made it for my granddaughter and her boyfriend once ages ago when she had her braces in and her mouth was sore.  They took it upstairs where they were playing computer games and I heard sounds of oh this soup is lovely.  Then my granddaughter came back down with one empty bowl and the other one half full.  Who wasted the soup I asked?  That's J's she said, but I thought he was enjoying it?  oh he was Nan, then he asked what it was and I said I wasn't sure, but I'd seen you peeling parsnips.  Oh I don't like parsnips he said!!!!! :lol:

He wouldn't eat anymore!!!!   :lol:

Both my Kids luurrv this and Pumkin soup. Amazing isn't it....
But put a nice roasted parsnip on their plates on Sunday dinner, and I guarantee they will push it to one side. :roll:

have you made them parsnip chips yet :?:  They seem to go down well with non-parsnip eaters too :D

Is that deep fried, Like the crisps? - Not allowed Deep fryer due to Cholesterol levels  :cry:

No, I mean chips as in chips  :D

Cholesterol  :?   You fry em in clean veg oil. No worries, then turn them out onto kitchen paper. Gorgeous  :D

You can make chips without deep frying at all if you wish. Just roll them in a little oil and then oven cook them

More than one way to skin a cat  :D

I make chips by parboiling my spuds first, ( 5 mins) then dry them off and thn put them on a baking sheet, spray them with fry light ( from the supermarket) them bake 'em for about half an hour....


yum yum

I leave the skins on the souds aswell even tastier :)

I'm gonna try it with parsnips now

I think with parsnips you're meant to peel them

Parsnip chips are just gorgeous. Lovely colour too  :D

mmmm. Thanks girls. Iv'e got a few bigguns left, so I'll give that a try on Monday, with leftovers/Bubble n squeak. :)

we do similiar minus the garlic

the kids love soup on dance day which is wednesday as they dont get a full dinner just a flask of homemade soup  :oops:
