I have been putting my eggs straight into fridge each day but my daughter said the book I read must be outdated as not recommended and food insp wouldn't be pleased if eggs in fridge! What's correct? Thanks

never put mine in a fridge but in a cool area in my utility room.

Are the eggs for your own use or do you sell them to the public?

The Food Standards Agency 'advice for caterers' page says to store them in a cool, dry place, ideally the fridge away from other food.

For my own use, straight into the fridge, probably not required, but why not?

For sale, well thats tricky, people could start asking if your fridge is tested on a regular basis for bacteria....
We use chemicals in this garden, just as god intended

The problem with keeping eggs in the fridge, then selling them is if you take them out of the fridge and put them on a table by your front gate and they warm up.  Then if you don't sell them that day, do you then put them back in the fridge?

Varying temps like that are not good, so if you are going to sell them, then don't refrigerate.  I keep mine in a cool utility room like Joyfull does, and they go into a plstic box outside the front door which is north facing, so they are always a similar temperature.

For your own use, if you put them in the fridge, they say they will keep fresher longer, but then you should bring them back to room temperature before you use them.  Ours never last long enough to go off anyway, so are never in the fridge!

The FSA guidelines for caterers are a little different to selling your eggs though Kegs!  I think DEFRA guidelines for selling eggs say not to refrigerate, but to keep cool at all times.

I also had this quandry, having always kept them in the fridge, I read that you should use them at room temperature and they should not be stored in the fridge as the shells are porus and if, for example you had onions in the fridge, your eggs could taste like onions - tho I guess whoever wrote that didn't have a stinky rottweiler!!
I don't have a utility room, and keep them on the kitchen side, but mine are always used within a couple of days anyway!
The glass is neither half empty or half full - it is simply the incorrect size! Find a new glass!

Having worked on a large poultry farm for years we only ever kept are stock in a cool room .

Supermarkets do not sell their eggs from a fridge! I use a fridge for mine purely because I had a cockerel and it is now a habit!! :)
