To Blanch or not to blanch......
« on: August 13, 2010, 10:15 »
I have a bean glut. I don't want to waste them but i don't have the inclination to stand around all of tomorrow blanching my vast amount of beans. I propose to slice runners and freeze as they are and french beans are going to be topped and tailed, cut into thirds and frozen in bags. I guess i'll be told this is a ridiculous idea and that i should sweat over a massive pan tomorrow!  :tongue2:

Does anyone do the non blanch approach and how usable are the beans afterward?

The beans will last longer in the freezer if you blanch them, so I would say it's worth the effort.  I found a bag in the freezer from last year and they were still perfectly edible.
Cheese makes everything better.

I'm not really bothered so long as they can get me round to Christmas time. I guess it's a question of how the quality will be? To be honest i'm sick of them at the moment, despite them being my favourite veggie!

Daphne Ledward (Gardeners' Question Time) says in her book, the Kitchen Garden Yearbook...
Quote
Peas, mangetout and beans may be frozen for up to 8 weeks without deterioration in texture and flavour.
