Title: What to do with marrows
Post by: Bozwell on July 04, 2009, 06:31
Looks like we are lucky enough to have a glut of marrows coming, but what to do with them and the best way if any to store the surplus.
Now I have never grown or eaten marrows before so this is all new to me. :)

We have the same problem in France with courgettes (which are basically small marrows!). I am currently making Mediterranean chutney and also have a recipe for courgette chutney. You could try these type of recipes - always supposing you like chutney!

Would it be ok to eat some of the marrows young then and treat them as a courgette.

Courgette pakoras are the business -
gram flour
rice flour (about a third of the gram flour)
green chillies, chopped
water
salt

Make a thick batter and deep fry the courgette slices. Yum

just a tip - do not store on top of a cupboard and forget about them. I gave one to my son, weeks later he remembered where he had put it, several weeks on top of a  warm cupboard it had rotten internally but seemd intact - he dropped it from about 8 feet up and plastered his kitchen in the foulest gunge imaginable.
Take care.
Stuffed with savoury mince is a far betetr way to use them.

try making a puree and freezing it in batches - add to soups, thats what i do with my courgettes too. Obviously dont add water, just a bit of oil and garlic, herbs to put in some flavour. Once its cooked down blitz it and freeze. Add stock when you want to use it - saves space in freezer.
