What can I do with red cabbage?
« on: May 16, 2012, 21:08 »
I have some red cabbage growing in the garden, they are ´hearting up´well (is that the correct term?)  Do I cook them the same as normal cabbage? (which I adore) or does anyone have something special I can do with them?

Many thanks

Pamela

Pickle them!

That's not exactly "special", though, is it?
Did it really tell you to do THAT on the packet?

Apart from pickling it, or using it in coleslaw I don't use much red cabbage although I seem to remember 'slow cooking' it once with apples and sultanas to go with lamb.  I'll have a look through my recipe box and see if I can find it.

MoS, you beat me to it!   Braised is lovely, but I overdid the red wine vinegar in my recipe, so it was a bit sharp!

I do Delia's recipe, it's nice and sweet - not too vinegary at all  :D
I try to take one day at a time, but sometimes several days all attack me at once...

I do Delias too and she's right, it warms up a treat the next night (and the next if there's any left).

I lovepickled cabbage but find it does not keep very well  -  it has a tendancy to loose its crispness so try and do just a couple of jars a month from autumn onwards.

Many thanks for the suggestions.  I will have to try it with eating apples as we can´t get cooking apples here in Spain.
