Beetroot Chutney

Beetroot Chutney

Well I've just attempted my first ever chutney as the title states it was beetroot. :D  I followed the recipe I found here, I think I should have halved the amounts as there was a huge pan full I'm not convinced (my fault not the recipes) it will work out I'm not a natural in the kitchen but with practice I get there eventually!!

One quick question though - should my entire house smell of vinegar - I used red wine vinegar

I dont tend to notice the smell now but I know when I answer the door on the same day I made a batch people tend to comment

I also made a new beetroot chutney today, tried one I havent tried before and I am very very happy cant wait to try it  :D

Thanks Beetroot Queen - I think I should have cut the beetroot and apple into smaller chunks for starters but will leave it for a bit it just tastes of vinegar at the minute hopefully it will settle down.

Looking forward to my next kitchen project which will be jam again another 1st!

I am going for another batch of courgette chutney tomorrow seen as my fridge resembles a wine rack filled with courgettes  :lol:

and it looks so pretty in the jar  :blush: I just love my chutney cupboard, shame it has a door on it I would happily sit and just stare  :closedeyes:

I try to take one day at a time, but sometimes several days all attack me at once...

Leave it for at least a couple of weeks and it will be fine.

Which recipe do you use BQ?

750g (1 1/2 lb) fresh beetroot. Need gloves for this or you look like you have commited murder
1 onion, chopped
400g (13oz) green apples, peeled and cored and chopped
410ml (1 1/2) cups of white malt vinegar
95g (1/2) cup of lightly packed soft brown sugar
125g (1/2) white sugar
2 tbsp lemon juice
1 tbsp salt

all ingredients in the pan stir over a low heat until sugar dissolves, bring to the boil and boil, stirring often for 20-30 mins, until the beetroot is tender and the chutney is reduced slightly. I found my first batch dried out slightly with storage so I left this batch slightly wetter than i normally would and I am very happy with the results.

Spoon into warm jars and seal down, leave for one month and eat  :D

I have just made the Beetroot Chutney from the recipe on this site (with raisins in), please can someone tell me how long it will store for and if it needs to go in the fridge.

Welcome to the site, homemade  :D

I haven't made that particular recipe but chutneys don't normally need to go into the fridge, certainly not before opening if the jars were sterilised before potting up.

Again as a general rule chutneys will keep for quite a few months without going musty or deteriorating.  Many actually improve after a couple of months as the vinegar becomes less tart.

Couldnt wait any longer we opened a jar today and it was better than the lot I did last year, I left mine runny and its soaked up all the juice and left the most sweet beetroot chutney I have ever tried, infact we finished off a whole jar in one go  :lol:

Your house.  If you're happy with the smell of vinegar what's it got to do with anyone else.  They're probably jealous because they aren't as productive.

Seriously the smell goes off pretty quickly, if you can leave a window open when making it does help.
