Oven/Sun dried tomatoes in oil

Ive been dying to have a jar of sundried tomatoes in herby oil for ages so going to have a go as soon as i get back from the shops.

 Im planning on drying them in the oven over night and then putting them in a bottle with some oil (Olive?) and some herbs and garlic and maybe even some parmisan slices.

Having not ever made these anyone got any tips ? what herbs work best? parmisan ok ? just any tips really as im gona make a few slightly different jars.

hope it works as my mouth watering just thinking about it.

Oh Man the thought of fresh dried tom's just makes my mouth water!
That's my second best way to eat them, after eating them fresh and warm off the vine!
Good luck with your trial jars and please report your findings back on here!
Never done my own yet, but maybe soon!

I have sliced tomatoes covered them in oil, sea salt and chopped basil, then placed on a baking tray in a cool oven (120) for four hours, they keep in a jar in the fridge for weeks (well they would if we didn't eat them so quickly as they are delicious!)
3 dogs, 8 chickens, 4 rabbits 2 guinea pigs, 10 quail, 2 fish and a demanding daughter who has gone to uni and left me with 29 animals to care for!!=)

I add oregano and chilli but only one garlic as I don't like to overpower the tomato taste with garlic.
I've not tried adding parmesan but think it would make it go off quickly, like the feta in oil recipe did Yuk the smell

I always wondered how to dry them :) so will be able to have a go now - mmmm got some nice feta to go with too, yum, thanks

Do the tomatoes used have to be plum toms, would a decent size round tomato be just as well e.g. Alicante?

You can use any tomatoes, but the meatier ones are better, and try to hook a few seeds out before you dry them. A mouthful of dried tomato seeds is not nice.
I dried cherry toms once and all I was left with was the skin and seeds which didn't taste very nice  :(

Thanks for that.  I don't have any plum toms this year but I do have Outdoor girl which can throw up some enormous fruit at times.  Got to have a go.

Well i bottled 2 jars yesterday. I used very good quality olive oil some tyme bit of oregano and 2 cloves garlic in each jar and some salt and pepper.

We have just finished the first jar with some Brie  :D :D :D :D :D :D they are Amazing. I know you are meant to wait but these things are fantastic.

I bought the tomatoes (very expensive) as mine arnt ready and it was a trial run. But im of to the lotty to free up some room then off to buy some tom plants as i now need LOADS of tomatoes to make some more!

They did take 18hrs to dry in my oven at the lowest setting of 50 tho.

The second jar is looking very tempting now, but im saving them for my camping holiday in 3 weeks.

They are delish! Love  'em. I've got a jar in the larder, you've reminded me of! So rice, fried chorizo, dried toms, garlic and roasted peppers etc - I'm drooling just thinking of it!

I'm growing some plum toms so I'll have to try this. However if the weather stays like this maybe we could try drying them outside :D Thanks for that MoS

I wish I had thought of this a couple of weeks ago. T*sco had loads of packs of toms reduced to either 40p or 20p. I bought as many as I thought I could use and we had lots of pasta with toms. I could have bought more and dried them though. Must remember to keep checking the reduced shelves

Mind you, you do have to consider the cost of 18 hours in the oven  :ohmy:
I try to take one day at a time, but sometimes several days all attack me at once...
