Val's Courgette Pie

One for John to ask!  I'm quite keen to try this pie, but my courgettes have got away from me and turned to marrows  :oops:   Will it work with marrows - do I need to peel and deseed them?

Sorry, I'd missed this post - she says to take the skin off and you don't want seeds either.

Our giant courgettes get a bit tough skinned!

Hi John - made the pie tonight, and it was fab.  Didn't have any parsley, so used some crumbled mint and oregano that I'd dried earlier in the summer.  ...Er, didn't have any cheddar either, so used mozzarella and parmesan  :lol:  And I layered the filling - put the courgette and onion at the bottom, with the eggy cheesey mix on the top - didn't use a big enough pan to mix them, and couldn't be bothered to wash up another one  :twisted:  Anyway, it tasted very Greek and very fabulous!

Glad you enjoyed it. Val and I treat recipes as a basis to work from rather than a firm plan so we substitute ourselves. Cheesy pies from a Greek cookbook end up being made with cottage, cheddar and stilton rather than feta and I forget what the other cheese was originally! Still use filo pastry for them.

Vals writing down her favourite recipes for chutneys and jams etc - should be online this week. Many of them are from our 1955 cookbook but they still work despite not bring metric and digital :)
