We finally finished all the freezer stored French and runner beans, so I got out some of the French beans I put through the dehydrator last year. I put 30g in a bowl, covered it with 200ml boiling water. After an hour I added another 100ml boiling water because they were no longer covered, and left them for another hour. I then braised them for 30mins with tomatoes, onions, oil, garlic - and they tasted like disgusting chewy leather. I thought I'd followed the instructions I'd read, but I really hope I did something wrong because otherwise the rest are getting chucked.

Anyone know if I did something wrong?

I find stuff rehydrates better in warm, but not boiling water

Same here. Also, how you dehydrate them is a big factor. THIS video offers good technique in case you did yours differently. Blanching is necessary for some veg, not for others, and French beans, aka string beans, definitely need blanching.
