Title: Nurse - 100ml of custard, stat.
Post by: Lardman on December 09, 2013, 15:58
Oh yes it would make me feel better, i am a bit like willy wonker, if i feel rubbish my baking is rubbish  :(

Here you go BQ... mini apple pies. Now Im a big fan of a classic apple pie, but despite being given lots of windfalls this year I have yet to produce anything I consider worthy of the title.

Todays efforts as you can see are burnt and I ran out of apples which means there wasn't enough filling to go round and despite that most of the apple still tried to escape out.  I will of course hide my feeble attempt and cover them in spoon standing custard  :tongue2:

Nothing wrong with those Lardman - I just love slightly well done pastry. But much prefer runny custard.  :)

Lower temp required, Lardman! Then pastry shouldn't burn and filling shouldn't boil over.

Shouldn't being the operative word, of course

Bung a few this way - I've got ice cream to go with'em  ;)

I think it may be a case of blaming my tools then - It's a double oven and I swear the temperature is less controllable than my rayburn was, I cooked those in the middle with it set to 170c.  I might have to buy some apples and try again.

Ice cream on apple pie ?! So wrong !

Good for you.  Man puddings  ;)  Nothing you can't hide under a layer of custard. Custard makes everything taste good  :lol:apart from trifle.  Blurgh    Soggy sponge fingers.

They look fine to me  :tongue2:

If I have any old apples in the fruit bowl, cookers or eaters, even windfalls, I make a Mary B cake with them.  It's fab!

Custard makes most things better  - I particularly like cold custard that you have to fight your way into.  :)

Those appley tarts look like my best offerings...

To be honest for apple puree in pastry they're fine - but they're not what I wanted. I want a nice deep apple pie , with chunky filling and not too much sugar, in a short crust pastry case which isn't hard and crisp and doesn't crumble to nothing when bitten.

No. Icecream and apple pie perfick

Im afraid I simply can't agree - you haven't sent me any HM apple pie ice cream to prove your theory  ;)

The ice cream would melt and you would, in effect, just have custard with lumps in.

You need to visit for HM ice cream.

Apple pie with ice cream...YUMMM!  Apple pie with cheese....YUCK!

Lardman, you might find this one easier - apple slab pie HERE (http://smittenkitchen.com/blog/2013/10/apple-slab-pie/)  For the pastry, I substituted all butter for half butter, half lard, and did an egg white wash for the top crust. For filling I added more apples and no nutmeg or allspice. didn't do the sweet glaze on top -too sugary for me. It turned out fab, and I was lucky enough to get 2 small slices before the family hogs finished it off.

Here's another one in need of custard, not so much to cover the taste but to improve aesthetics.  ;)

I've had a request for some shortbread for the winter festival - a quick search brought up this  Hamstergberts shortbread biscuit (http://chat.allotment-garden.org/index.php?topic=101234.msg1127855#msg1127855) didn't look too complex - but compare the results.  :( Guessing the oven was too hot and too much butter caused them to slump ?
