Title: Storing beets

We just received 4 pounds of beetroot from my son, tops off.  We will likely use some in the next few days, but I was wondering if the rest will keep well in a plastic bag in the refrigerator for 2 to 3 weeks?

Our Thanksgiving holiday is November 23rd, it would be great to have some then if they are likely to keep.

They should do if well sealed in a bag. You can store beets over here in a shed over winter and they hold for a good while, but it is probably a bit warm where you are so the fridge would be a better option.

Roasted beets freeze really well.  I often store them that way.

Thank you for that, we will eat some this week, but also save some for the holiday.
