perfect pancakes!!!

whats your recipe for those perfect fluffy pancakes?

mine is
300ml of milk
125g of organic flower
splash of vanilla essence
1 egg

looking for something more tasty though :D

Try them the American way - basically the same, but separate the eggs (3), fold in the yolks with the milk, then beat the whites until fluffy and fold in gently with a tsp of bicarb, drop small dollops onto the hot pan.
Alternatively, make large pancakes, but add 1oz melted butter and half an ounce of sugar

2 cups flour
1/4 cup sugar
3 tsps baking powder
1 tsp salt
2 eggs
2 cups milk
1/3 cup oil

Combine dry ingredients in large bowl and wet ingredients in a another, then mix wet into dry

But why does the first pancake, whatever recipe you use, never cook 'right' it's only the second , third and laters that turn out okay.  The first one (which I usually end up with ) is always doughy.

I reckon it's because you think the pan is hot, but it's not. It's only once you've managed to burn the first one that the others cook well.

DD, you actually 'season' the pan with the first burnt offering  :lol: You should see the first crepe that comes off the pan; it always looks like it went through the wars.

As for batter, I always add some melted butter, an extra egg, a tsp or 2 of sugar and some baking powder into gardener's basic mix, but leave out the vanilla.

We keep the mix simple, but the quantities have to be precise.

Some flour
Some eggs
Some salt
Some milk

Made some for dinner yesterday, rolled around a leek and bacon stuffing, topped with a white sauce and grated cheese then in the oven. :D Yum, but what a faff!  :wacko:

Making pancakes is alchemy, the quantities must be precise.

I use

2 Eggs,
Some flour to make a smooth paste that looks good to me
Some milk to make the smooth paste into a batter that looks good to me

Oil and a hot pan - oil in, swirl around and wipe away with a pit of kitchen paper!

My first one came out perfectly this year, however I was using a new tefal pan, im sure you could put superglue into it and it wouldn’t stick heh.
