Title: Can you freeze marzipan?

Blimmin Trashco delivered marzipan that has use before date of Thursday  :mad: my mistake didn't ask for long-life ...... but still..................

don't need it for a fortnight *sigh* or is it headed straight for the dustbin?

Yes you can. I'd triple wrap and get as much air out of the wrapping as possible. It can be frozen for about 6 months.

Use by or best before - it will keep in the fridge in the same packaging for a month.

It's the best before date, so if I freeze it unopened, then defrost, marzipan and ice the cake the day before it's needed, it should be fine?

If there is any air in the packaging I would be tempted to get it out, wrap and then freeze. If not then I'd just stick it in there.

I wouldn't have thought you would need to freeze it just for 2 weeks.  I marzipan my Christmas cake well before and it keeps okay. As long it is well wrapped and kept cool and dry you should be ok.

Yes you can freeze it but if it is a best before date I would ignore the date. It will have so much sugar in, it will keep beyond the date anyway.
