Hi

I've picked the last of my courgettes today and want to make piccalilli. I've still got Caulis on the plot but is there anyway I can stop the courgettes getting bendy and too old to use before I get to the cauli? I really can't get up to the plot before weds and that will mean the courgettes will be 3 days old before the salting stage. In my experience they go 'bendy and sour quite quickly after picking ESP the small ones.

Any tips on keeping them 'fresh' I've currently got them in water in the fridge.

Wrapping in a damp teatowel or newspaper in the fridge, works for runner beans, so it might work for courgettes.

Also putting them in a plastic bag with a piece of kitchen towel in it works too.  I've had courgettes, runner beans and carrots in bags like that for 2 weeks and they are still fresh and crunchy!
