I used 2tbls of Rum and although it smelled very strong before baking, after baking there wasn't much aroma but a lovely light flavour.  I'll increase it by another spoon when I make it again as I think it could still do with a bit more but I'm cautious not to go overboard.  Everyone enjoyed it more than the usual (basic) recipe I make so I'll need to up my standards lol.

I had a quick look at the other recipes, are there any others you have tried and recommend?  The carrot cake looks tempting as do the cherry berry fruit bars so I'll keep the page bookmarked and let you know when I get round to more baking  :happy:

im glad you enjoyed it and it kept well unfortunatly my kids are not so adventerous thetought of banana was to much wont tell them next time ha ha
