Supermarket egg madness
« on: April 10, 2011, 18:21 »
Have a read of this and boggle at who exactly is going to pay £1.99 for 2 turkey eggs.  Mind you, this seems almost sane compared to £25 for a rhea egg

The more money than sense brigade are taking over the assylum

I think general supermarket prices for everything have gone mad!
I swear 3 years ago a weekly shop used to cost me £25, its closer to £45 now for the same stuff!
Grrrrr

If the eggs tasted different to hens eggs they might be worth the extra money but i guess they are much the same.
Ostrich and pheasant taste the same as hens eggs.

Massa, if people are willing to pay that amount for two eggs from a supermarket, you could charge just less than that and be a bargin!!!

That's ridiculous! When my Mum started her catering business in the 70s we used to get turkey eggs from the local turkey farm because they were so cheap! A by-product more than anything. They make great light cakes and quiches, but as far as I remember, quite light in flavour too. But not that fantastic! £2.99.....ridiculous!

HOW MUCH for a rhea egg??????????? Crazy.

The Weekend supplement in the Daily Mail 9April gave some egg recipes and a panel of Eggs Know-How:

"Ducks eggs...around £2,35 for 6
"Goose eggs.....Find at farm shops around £6.99 each {hope this was typo?}
"Quails eggs......around £2.20 for 12
"Ostrich eggs.....£19.99 each at Waitrose

Pretentious, moi?

I had the same problem with our poot eggs, so I explained they're great for picnics and salads and they have less white than larger eggs, now there's no problem :D

Maybe you could let people know duck eggs are great for baking  :D

Think it is because people are scared to try something new. I work in a hospital with a large Philippino population of staff and they love duck eggs, especially for salted duck eggs. I think it really is a case of when something is popular even more people want it. When others saw how much they were saught after they all wanted them! My girls can't lay enough and I now love salted duck eggs too!
Be like a duck. Calm on the surface but always paddling like the dickens underneath.

Make a saturated salt solution (as much salt as you can dissolve in water with a little bit still solid). Place clean, fresh, uncooked eggs in a jar and cover with the saline. Leave for at least a week and up to 4-6.

The longer they are left the saltier they become. They are usually used hard boiled in salads and the like. When just a week or so they are just pleasently salty. The longer you leave them the saltier they become. The nature of the yolk also changes and become sort of preserved and waxy. When they are very salty the White is discarded as it is overpowering and just the yolk is used.

I have become very fond of them sliced and in salad. Apparently chicken eggs don't work the same due to the texture.
