Title: Fermentation ended?

Just bottled last years apple wine which i thought had finished fermenting in the demi john.  I'm not sure that it had now as i heard a slight fizz when i opened one of the bottles.  My question is:  what do i do to stop it now its bottled.  I don't want any explosions :ohmy:

Its a little dry too, can i make it sweeter without using artificial sweetner? :)

The usual method would be to add a campden tablet, one tablet per demijohn means 1/7th tablet in a 70cl bottle of wine - you could dissolve the tablet in say 50ml of water and add 7ml to your bottle (assuming you can measure to that accuracy)

If there is some fermentation going on and you add a fermentable sugar then unless its a champagne type bottle you will be in a spot of bother!
