Mrs Growster has just discovered that if you leave any mushrooms - shop or field, in a sunny position for a while, they just absorb the light and create huge amounts of Vitamin D, and then become a great way to back-up and restore levels in the human body!

We've never heard of this, as I've never had any success with them, but as they grow in darkness, they presumably want to catch up!

Seems to make sense, and worth remembering in the winter months!

Aldi sell punnets of chestnut mushrooms enriched with vitamin D. I was curious and looked it up.  James Wong enthuses over this, amongst others.

It seems a really easy way to boost your vitamin intake, especially over the winter months  :)

I adore mushrooms - Mrs Growster has gone off them for a while, but they make a great 'in between' sort of meal when all other ideas just flutter away in the breeze...

I sometimes use chopped up mushrooms instad of meat (or just reduced meat) in bolognaise / lasagne sauce. I also replace one of the layers of cheese sauce with mushroom sauce.

I don't like mushrooms, but I do use Watkins Mushroom Ketchup quite often in cooking.  Does that count  ;)  Mrs Bouquet
