Title: Leek Sauce

Has anyone got a good recipe for leek sauce?  I have got leeks growing in the garden this year for the first time and want to show them at their best rather than hiding them in mixed veg soup.  What do you eat leek sauce with and how long will it keep?

Oohh..oooh.. I think I know the answer.
Make a rue sauce - melt the butter add flour and make into paste. add a small amount of milk to pan and mix it  into the paste until it disappears. keep adding milk slowly untill a thick sauce is made. Pre boil the leeks (sliced) and add to the finished sauce. When cool, I freeze it in margarine tubs in nice size portions. We always have it with Roast Lamb.
 
Ohh forgot to answer the last question... Probably years!! keep finding it everytime we clean out the freezer.... I'm not dead yet!

Just thought I'd let you know that there are 22 recipes on this site with leeks as a main ingredient - you don't have to hide them! Leek Recipes (http://www.allotment-garden.org/recipe/category/vegetable-recipes/leeks-recipes/)

Sorry, I wasn't trying to hide the fact, I think your recipe section is a really usefull resource. Do you add all the new recipes suggested on here?

i like leeks with goats cheese - i think the flavours go really nicely together.

even something as simple as part cooking (i steam mine) sliced leeks then put them in a dish, grate over some goats cheese and finish under the grill/oven.

Was referring to Debz who didn't want to hide her leeks and show them at their best!  It's easier if you send them direct to me through the website on my e-mail as it's sometimes difficult to track them on the forums. There's a link besides the recipe pages to do it this way.
