I have caulis that look as though they will be at their peek a week too soon for our local show. Are there any tricks of the trade to slow them down or store them.

Break leaves over their curds to keep any sun (Not round here!) off them.
Pulling them with roots attached and keeping them in a cool bright place hanging up will keep the curds fresh but the leaves do wilt. Don't trim them back until the morning of the show.
I have found trying to keep them in the fridge partly trimmed but not in a plastic bag can be OK for a day or two as well.
