How about beetroot in jelly. Tasty with salads, not so 'vinegary' as tradtitional beetroot in vinegar

Boil the beetroots until cooked, rub skins off and dice finely.
Fill jars with the cooled beetroot.
Mix quantities of distilled vinegar and jelly (I prefer blackcurrant) proportions are 1/2pt vinegar to 1 jelly, heat vinegar and dissolve jelly, cool slightly and pour over beetroot dice.
When set cover with vinegar proof lids.

You might need to adjust the amount of jelly depending on how firm you like it.

I've just been given a load by my lottie next door neighbour and am going to attempt Borscht with them, once I've got the recipe from my mum.

superb recipe here - baked beetroot with balsamic vinegar, marjoram and garlic.

1. Preheat oven 200 - gas mark 6
2. Peel your beets and tear off about 1/2 metre of foil. bend sides up.
3. place beets in foil - cut in half if they are big.
4. Add 6 -10 cloves of garlic, 10 tablespoons of balsamic vinegar and 6 tablespoons extra virgin olive oil.
5. Add black pepper and a handful of marjoram or oregano.
6. Seal the foil bag by scrunch all sides together.
7. Place in oven and roast for about an hour until tender.

Truly superb.

My mum's recipes aren't set in stone but anyway:

4-5 medium to large beetroots, peeled and grated
1 onion, chopped
Lemon juice to taste
2 x tbsps sugar
bit of salt & pepper

About 2 pints of water (she just said the more beetroots you use the more water you use, well she is 83!)

Bung it all in the pan and cook for 45 minutes, adjust seasoning, add a swirl of sour cream to the bowls and serve either hot or cold.

Voila.

I know, but I want to get some of them written down, as they've been handed down the generations since my Jewish great grandparents came to England from Eastern Europe. When I try to make things according to mums instructions they never turn out as nice as when she makes them, she seems to do it on instinct.  I think the next time I see her I'll just watch her do it and try to take mental notes.
