Celeriac, when to strip leaves

I seem to have a great crop. They were germinated in early March, planted out early May and now have roots about billiard ball size. At what point do other members start to remove some of the outer leaves?

Wait until the outer leaves begin to bend down toward the horizontal. Pull those off the plant. As the season progresses more and more will bend downwards so by pulling them off more and more of the root is exposed. :)
