Law regarding sale of eggs?

Hi, I work on a farm for adults with learning difficulties, I would like to do a stall at a show in summer selling a few of our duck/chicken eggs, I was wondering if anyone knows the laws regarding selling eggs? Do my employers have to be registered somewhere  or have insurance? ie. If someone got ill as a result of eating our eggs they had bought (and wanted to claim compensation--I am covering all eventualities here, someone somwhere would Im sure). Do I have to clean them? Date them? Because it is a business not my home are there any different rules?
If anyone could shove me in the right direction-web sites, phone numbers that would be great.

I think that if you have a small flock of poultry and you are not selling to a retailer ie you are selling direct to the consumer (as you would be) then a lot of the legislation does not apply to you. I believe that eggs should be less than 9 days old if being sold and should be marked as believed fertile if they have been running with male birds.
However, the best thing to do would be to phone up defra or maybe a local farmer's market would probably know the law. (THIS site might have some useful info but it is all in legal speak).

I'm sure I remember reading that birds have to have had certain vaccinations if you wish to sell the eggs and not use them for your own consumption.

I agree with Pushrod that DEFRA can advise and cut thro a lot of the hearsay that may or may not be correct.

If you go back to the first page of Poultry Keeping on this site and scan down the right hand column, you will come across very good info on selling surplus eggs.
