This is good if you are tired of pastry, or find a jar of mincemeat at the back of the larder. It is also great for children to help with and eat
Makes 32.
12 oz mincemeat
8 oz currants
2 eggs
5 oz caster sugar
5 oz soft butter of margarine
8 oz S.R. flour
32 paper cake cases
Combine all the ingredients in a large bowl and beat well for 2 minutes.
Divide the mixture evenly into the paper cases. (or put them into bun tins if preferred)
Bake in preheated oven at 160c, 325 f or gas 3 for 25-30 mins until golden and springy to the touch.
Transfer cases to racks to cool.
