my friend comes to dinner most Thursdays I nearly always cook pasta bake, squash stew or vegetable crumble?

Fresh I have spinach, squash, french beans, fat babies, potatoes, beetroot, broccoli, onions and garlic.

Store cupboard chick peas, lentils, butter beans br rice, pasta loads of spices, nuts dr fruit. and most staples flour ect.

Is your friend ovo-lacto vegetarian? If so you could try making a nice frittata.

I'm the vegetarian she eats anything

It a good idea though haven't made one for ages and I've got some mushrooms too.

I also once made a pancake layer thingy, which even the meat eaters enjoyed.  There were 3 fillings, one was green so spinach and stuff mixed in with either a white sauce or cream cheese (light Philly would be nice!), then there was a white layer, leeks I think , then an orange layer which was carrots, again mixed in with a sauce.

The whole lot was covered in a white cheese sauce and grilled til browned.  If just for 2 you could say roll the pancakes rather than a layer, then pour the cheese sauce over.  It did look nice when finished.

Sounds nice I haven't had pancakes for ages I like the combination. I'm thinking beetroot with sesame seeds, mushrooms and the spinach and cream cheese.

A Spanish style omlette with any fillings that you fancy with a spinach, beetroot and onion salad. Cake for afters.
That will all taste good after a fast day.

Not quite vegan with the cream cheese but sounds good. This lot will keep me going till yule thanks must get yeast for a pizza too.
