Made cordial last year some of which we still have. Going to make some jelly this year. Don't do wine etc, so any other thoughts about how to use them? Our allotment is covered in them this year, and I'm about the only person who forages for them!

DD wants to make cordial but we havent made it up to the plot to get any.  ::) next year it will be newborn free and i will get able to just get on.

I am a huge fan of jellies so let us know how it turns out.

Might make a mulled version with cinnamon and cloves. It worked for the cordial which is great as a hot drink.

I've just made a batch of elderberry syrup, which is actually a healing tonic for any respiratory problems, and I used this recipe with some lemon juice added to cut the heaviness of the syrup as well as to bottle it safely since I made a large batch.

I'd picked 2 big buckets of berries and I dehydrated the rest  to use for future tonics as needed.

I have made elderberry jam and it is really good  :)

I also made a compote to stir into my breakfast yog yummm

To make my compote I did this......   I am no Mary Berry  :D

Well I just put the elderberries in a pan and simmered for about 15 mins then rubbed them through a sieve.  Weighed the puree to give me an idea of how much sugar to use and put it back into the pan adding the sugar bit by bit tasting to see when is was ok. Then simmered until sugar was disolved and then I put it into ice cube trays and into the freezer. So I can have a cube in my porridge/custard/semolina.   ::)
