They are a bit like courgettes, high water content, so fine in dishes that take a while to cook I find.  I often buy peppers reduced and chop them up, freeze and then add to spag bol.

hi,
I found a good way last year:-
Slice them lay them on a tray (I used my plastic dinner tray).
Put cling film over them and put in the freezer.
Once frozen put into one bag.

I was lucky enough to have a big chest freezer last year   :)  , but as of a week ago we have got a new one.  :(

hope this helps.

Dan

I dice them & bag up with room to spare then when frozen just bash them to loosen up. Need to be used in cooked dishes as said previously

As Dantheman suggested, I'd open freeze them chopped on a tray before putting into a bag and freezing.  It makes it more likely that you can simply remove handfuls as required later on, rather than having to bash them first.
