What did I do wrong?

What did I do wrong?

I tried to make rosemary and apple jelly yesterday and today but I haven't done very well. 

To start the amount of juice that came through the bag was so small I had to squeeze it to death to get at least some out (I know I shouldn't have done this but there was no other choice) So what did I do wrong?  Bag to fine?  Stewed the apples for too long?

Secondly I then boiled the pulp and sugar and when ready I turned of the heat checked my jars were ready to go (not more than 20 seconds) and then stirred the jelly again.  Well by this time there was a skin on top which then got mixed with all the other jelly!

My 2 jars!! (yes that is all I got) now look like apple sauce and not the clear jelly it was meant to be.

Oh dear-it was meant to be the start of my Christmas prezzie stash! :tongue2:

I suspect that you shouldn't have squeezed the bag - certainly my books say if you squeeze, you'll not get a clear result.

Not sure about the rest of the process, perhaps others will know  ???
I try to take one day at a time, but sometimes several days all attack me at once...

Yeah I know, but if I hadn't I would have had 1/2 a jar!  It had been straining for 16 hours.

Sounds like you boiled away too much water thus reducing your volume and the jelly being too thick....is it set solid now?

Probably too fine a cloth. They recommend muslin, which has quite an open weave (think of a cheesecloth shirt) ::)
But must admit that I do squeeze my bags  :blush: if it's only for me...my aim is only to remove the pips and stalks :) but must admit the end result doesn't look nearly as pretty :(
