Bumper chilli harvest

I have just harvested 4 out of my 8 Jalapeno & Cayenne plants & have well over half a Tesco bag of them :-)

Any one know of any good pickling & cooking recipes?

We dont have that many but we were going to dry ours, last year we put them in the freezer but found a lot of the heat was lost so this year we will try drying them.

I *think* you'll need to register to see the recipes/preserving forum, but they're cool and they don't spam @link Chillies Galore ... they have some great recipes.

We thread ours onto cotton and they dry well, keeping their heat. Last all year too  :D

my crop was useless, so rather than fretting what to do with them....just send them all to me!!!!! :blush: No? Oh well, it was worth a try....
small, Welsh and almost certainly bonkers, but can be tamed with Talisker, if required

Last year I made chilli jelly, and tomato and chilli sauce from the recipe books by Pam Corbin and Hugh Fearnley Whittingstall, both very good and have lasted well. Also dried quite a lot of chillis and am still using them even though this year's crop are ready!

I tip mine into the blender, whizz them up and put in a jar and pour white wine vinegar over them.  Still using last years and they're fine.  As I've said before this is also what I do with our garlic (just finished using 2007's lot and starting on 2008's).  Got the idea from the lazy garlic and chilli that is sold in supermarkets. If you read the labels that's all that's in them.

I've got lots of chillis this year but they are still at the green stage most of them. What can be done with them? I take it they need to be red before they can be dried? This was what I wanted to do with them all but they don't seem to be budging!

That sounds interesting, do you heat the vinegar first?  How long does it last?

Really?! That's cool, I was going to leave them on the plants as long as I could in the hope they would ripen but now i can get picking straight away. Thanks  :)

No I don't heat the vinegar and as I said we are still using last years.  The garlic done the same way is 2007 (just finished and about to start on 2008).  Smells the same a 2007's.  You can't tell how old the shop stuff is.

So jealous!  Our chili plants did bupkis this year. 

We were going to make hot sauce with ours.  Boil chilis in salted water for a few minutes, then puree in a blender and add vinegar.  There are infinite variances to this--adding tomatoes when you're cooking the chilis, fruits, spices...the world is your oyster!

Pop some of them in olive oil!  Brilliant for cooking!
When I die I will slide in sideways, a glass of wine in one hand and chocolate in the other, screaming, "Whooo hooo!  What a ride!" as life is to be enjoyed to the fullest!
